Beef and Lime Rice Salad

Recipe Introduction
Let kids eat this salad with tortilla chips.
List of Ingredients
- 1 lb lean ground beef
- 1 tsp grated lime rind
- 1/2 tsp cumin powder
- 1/2 tsp salt
- 1 T fresh lime juice
- 3 cups cooked rice
- salsa
- shredded cheddar cheese
- tortilla chips
- sour cream
- chopped tomatoes
- chopped green onions
- avocado slices
Instructions
- Cook ground beef in a 3 quart saucepan over medium-high heat, stirring constantly until it crumbles and is no longer pink. Drain the ground beef and pat it dry with paper towels.
- Grate the lime rind. Combine beef, cumin, salt, lime rind and lime juice in a serving bowl, then add cooked rice. Serve salad with desired toppings. This salad be served immediately or chilled and served cold.

Serves 4
*Different grains: long-grain rice is fluffy and separates easily. Medium grain is tender and becomes stickier as it cools. Short grain has a high starch content that makes it moist, tender and almost creamy.
*Healthy alternative: brown rice has only the outer hull removed, making it more nutritious than white rice.
