    Beef and Lime Rice Salad

    Recipe Introduction


    Let kids eat this salad with tortilla chips.


    List of Ingredients


    • 1 lb lean ground beef
    • 1 tsp grated lime rind
    • 1/2 tsp cumin powder
    • 1/2 tsp salt
    • 1 T fresh lime juice
    • 3 cups cooked rice
    • salsa
    • shredded cheddar cheese
    • tortilla chips
    • sour cream
    • chopped tomatoes
    • chopped green onions
    • avocado slices


    Instructions


    1. Cook ground beef in a 3 quart saucepan over medium-high heat, stirring constantly until it crumbles and is no longer pink. Drain the ground beef and pat it dry with paper towels.
    2. Grate the lime rind. Combine beef, cumin, salt, lime rind and lime juice in a serving bowl, then add cooked rice. Serve salad with desired toppings. This salad be served immediately or chilled and served cold.


    Final Comments


    Serves 4

    *Different grains: long-grain rice is fluffy and separates easily. Medium grain is tender and becomes stickier as it cools. Short grain has a high starch content that makes it moist, tender and almost creamy.

    *Healthy alternative: brown rice has only the outer hull removed, making it more nutritious than white rice.
