    List of Ingredients


    • 1 pkg (5 oz) tabbouleh mix
    • 1 cup boiling water
    • 1 cup canned black beans, rinsed and drained
    • 1 medium tomato, finely chopped
    • 1 T cilantro pesto or 3 T chopped cilantro
    • 1/4 cup chopped roasted red pepper, jarred or fresh
    • 1/2 tsp chili powder
    • 1 T lime juice, organic bottled or fresh
    • salt and pepper, to taste


    Instructions


    1. Combine the tabbouleh (without its seasoning pack) and boiling water. Cover loosely and set aside until the water has been absorbed, about 5 minutes.
    2. Add beans, tomato, cilantro, pepper, chili powder, lime juice, salt and pepper. Toss to distribute the ingredients evenly.
