Black Bean, Feta and Couscous Salad

- 10 oz. couscous, uncooked
- 1 3/4 C. black beans, rinsed and drained
- 1/3 C. minced red onion
- 1/4 C. chopped fresh mint
- 1/3 C. lemon juice
- 1/4 C. olive oil
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 3/4 C. (3 oz.) crumbled feta cheese
Instructions
- Prepare couscous according to pkg. directions.
- In a large bowl, combine beans, onion, mint, lemon juice, olive oil, salt and pepper. Fluff couscous with fork; combine couscous with bean mixture. Gently fold in cheese.
- Refrigerate at least 30 minutes. Garnish with additional cheese and fresh mint, if desired.
