Celery, Radish & Mushroom Salad

List of Ingredients
- 1 1/2 cups celery, thinly sliced
- 1 1/2 cups radish, thinly sliced
- 1 1/2 cups white button mushroom caps, thinly sliced
- 1 T extra-virgin olive oil
- 1 T fresh lemon juice
- 1/2 tsp kosher salt
- freshly ground black pepper, to taste
- parmesan cheese, shaved
Instructions
- Combine celery, radish, and mushrooms in a large salad bowl.
- Whisk together the olive oil, lemon juice and salt. Toss with the vegetables. Top with a few shavings of Parmesan cheese and several sprinkle of freshly ground black pepper.
