Cheesey Italian Cole Slaw

List of Ingredients
- 1 bag (16 oz) coleslaw mix
- 2/3 cup low-fat balsamic vinaigrette
- 1/4 cup chopped oil-packed sun-dried tomatoes
- 1/4 cup chopped fresh basil
- 1 cup (about 5 oz) cubed fresh mozzarella cheese
Instructions
- Place coleslaw mix in large mixing bowl.
- In separate bowl, whis together vinaigrette, tomatoes and basil. Pour over coleslaw mix; toss.
- Top salad with cheese. Serve coleslaw in hollowed-out head of red cabbage, and garnish with fresh basil sprig, if desired.
