    Recipe Introduction


    The ultimate summer side dish. Delicious and healthy. Best of all, it will cool you down.


    List of Ingredients


    • 2 cups nonfat yogurt
    • 2 whole, seedless cucumbers
    • 2 cloves garlic, minced
    • salt, to taste
    • black pepper, freshly ground, to taste
    • 1/3 cup fresh mint, chopped
    • 1/3 cup flat leaf parsley, chopped
    • 2 tsp extra virgin olive oil
    • pita bread


    Instructions


    1. Peel the cucumbers, cut each one in half lengthwise, and cut into 1/4" dice.
    2. Crush the garlic and salt together into a paste. Stir the yogurt into the garlic paste. Add the cucumbers, pepper, mint and parsley. Toss to mix. Adjust salt and pepper to taste.
    3. Just before serving drizzle with the olive oil. Tear of fpieces of the pita bread and use them to scoop up salad.
