Whip up this light and easy pasta salad in minutes. It makes a great side dish for your favorite grilled dinners.
List of Ingredients
- 3 tablespoons olive oil, preferably extra-virgin
- 4 teaspoons white balsamic vinegar
- 1/2 teaspoon minced garlic
- 1/2 teaspoon sugar
- 1/4 teaspoon salt
- 8 ounces orzo pasta
- 6 ounces Mediterranean herb-style feta cheese, crumbled
- 1/4 cup chopped roasted red bell pepper
- 1/4 cup chopped fresh parsley
Instructions
- For the dressing, combine olive oil, balsamic vinegar, garlic, sugar and salt in a covered jar and shake to mix well; set aside.
- For the salad, cook pasta according to package directions; drain.
- Combine pasta, feta, roasted pepper and parsley in a salad bowl and mix well. Pour dressing over the salad and toss to mix well.

*Balsamic dressing keeps well for up to two weeks in the refrigerator. Consider doubling the quantities and refrigerating the excess. You'll have restaurant-quality homemade dressing ready to use.
*If you can’t find white balsamic vinegar, you can substitute regular balsamic vinegar in this recipe, but use less (about 1 tablespoon) since it has a stronger flavor.
