List of Ingredients
- 3 medium tomatoes,cut into wedges
- 1 medium cucumber, halved lengthwise and thinly sliced
- 1 small red onion, cut into thin wedges
- 1 recipe Greek Viniagrette
- 8 to 10 Greek black olives
- 1/2 cup crumbled feta cheese
Instructions
- In a salad bowl combine the tomatoes, cucumber, and red onion. Add Greek Viniagrette; toss to coat. Sprinkle with Greek olives and feta cheese.
Final Comments
Makes 4 side-dish servings.
For Greek Vinaigrette, in a screw-top jar combine 2 T olive oil; 2 T lemon juice; 2 tsp snipped fresh oregano or 1/2 tsp dried oregano, crushed; 1/8 tsp salt; and 1/8 tsp pepper. Cover and shake well.
