Lime Caesar Salad

Recipe Introduction
Add 4 cups of cooked shredded chicken and turn this zesty salad into dinner!
List of Ingredients
- 1/2 cup canola oil
- 2 (6") corn tortillas, halved, cut into 1/4" wide strips
- 1/4 tsp salt
- 1 lime
- 1/4 cup bottled Caesar-style vinaigrette salad dressing
- 1 T chopped fresh cilantro
- 1/8 tsp Tabasco sauce
- 1 head romaine, torn, 6 cups
- 1/2 lb jicama, peeled, cut into 2" x 1/4" pieces*
- 3 plum tomatoes, cut into wedges
- 1 avocado, pitted, peeled, sliced
Instructions
- In 10" skillet, heat oil over medium-high heat. Fry tortillas in batches until crisp and lightly browned, 1-2 minutes. Drain on paper towels. Sprinkle with salt; reserve.
- Grate 1 1/2 tsp zest and squeeze 1 T juice from lime. In large bowl, whisk dressing with cilantro, juice, zest and Tabasco. Add romaine, jicama, tomatoes and avocado; toss. Sprinkle with tortillas.

*Can't find jicama? Substitute 1 3/4 cups quartered radishes for a similar crunch.
