Mediterranean Potato Salad

List of Ingredients
- 1½ pounds red potatoes, boiled and cooled and cut into 2-inch chunks
- 3/4 cup red onion, thinly sliced julienne
- 1 pound Beefsteak tomatoes, cut into salad wedges
- ¼ pound cucumber, peeled and cut into 1/8-inch-thick slices
- ¼ pound whole pitted kalamata olives (about ½ of 11.5-ounce jar)
- ¼ pound whole pepperoncini (an 11.5-ounce jar), stems may be removed
- ¼ pound feta cheese, crumbled
- 1 small green bell pepper, thinly sliced
- 1 cup of the Greek dressing (see recipe)
Instructions
- In large bowl, mix salad ingredients together. Toss with dressing.
- Cover and chill overnight.
Final Comments
Makes about 8 servings
Greek dressing:
2 cups extra-virgin olive oil
1 cup red wine vinegar
¼ cup chopped garlic, or less to taste
Kosher salt to taste
Coarse black pepper to taste
1 tablespoon dried oregano
½ pound crumbled feta cheese
In bowl, whisk together all ingredients. Remaining dressing can be reserved for another salad.
