PESTO PASTA SALAD

List of Ingredients
- 8 ounces uncooked rotelle or spiral pasta
- 4 cups broccoli florets
- 1 package Knorr® Pesto Pasta Sauce Mix
- 1/3 cup Bertolli® Classico™ Olive Oil
- 3 Tbsp. red wine vinegar
- 1 cup cherry or grape tomatoes, halved
- 1 cup cubed mozzarella cheese (about 4 oz.)
- Salt and ground black pepper to taste
Instructions
- Cook pasta according to package directions, adding broccoli during last 5 minutes of cooking. Drain and rinse with cold water until completely cool.
- In large bowl, with wire whisk, combine Knorr® Pesto Pasta Sauce Mix, Olive Oil and vinegar. Add pasta with broccoli, tomatoes, cheese, salt and pepper; toss to coat. Serve immediately or chill until ready to serve.
Final Comments
Makes: 8 cups
For a quick main-dish pasta salad...try adding 1-1/2 cups diced cooked chicken.
