Picnic Potato Salad

A comforting and familiar salad made even better with a hint of fresh dill.
List of Ingredients
- 8 cups water
- 2 tsps salt
- 8 cups quartered small new red potatoes
- 2/3 cup sour cream
- 2/3 cup mayonnaise
- 2 T chopped fresh parsley
- 2 T country-style Dijon mustard
- 1 tsp finely chopped fresh garlic
- 1 tsp dried dill weed
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 cup sliced green onion
- 8 slices crispy cooked bacon, crumbled
Instructions
- Bring water and 2 tsps salt to a full boil in 6 quart saucepan; add potatoes. Cook over high heat until potatoes are tender (12 to 15 minutes). Rinse with cold water. Drain.
- Combine all remaining ingredients except bacon and green onions in large bowl. Add potatoes; toss to coat. Cover; refrigerate until serving time (1 to 2 hours). Just before serving, sprinkle with bacon and green onion.
