Spicy Turkey Taco Salad

List of Ingredients
- 4 Mission® 8 inch Medium Flour Tortilla
- Non-Stick Cooking Spray to coat
- 1 pound Ground Turkey
- 1 pack Spicy Taco Seasoning
- 1/4 cup Sour Cream
- 1 tablespoon Mayonnaise
- 1/2 each Fresh Lime juiced
- Salt to taste
- Black Pepper to taste
- 1/4 teaspoon Chili Powder
- 4 cups Iceberg Lettuce, shredded
- 1/4 cup Chopped Red Tomato
Instructions
- Pre-heat an oven to 375º oven. Remove the bottom and top from a 29 oz. aluminum can and any paper label. Wash and wipe dry.
- Lightly spray one side of a Mission® Medium Size Flour Tortilla and place the sprayed side up on the clean aluminum can and place in the pre-heated oven and bake for 6-7 minutes or until light brown and crisp creating a shell. Remove and repeat for the remaining 3 tortillas.
- While preparing the crisp tortilla shells start browning the ground turkey and follow the taco seasoning package instructions; reserve warm.
- Mix sour cream with mayo and a fresh squeeze of lime juice then season with salt, pepper and chili powder to create your own Chili-Lime Dressing.
- Toss 1 cup of shredded iceberg lettuce with 1 tablespoon of chile–lime dressing. Place one cup of dressed lettuce into each shell. Top each salad with ¼ cup spicy taco seasoned turkey and 1 tablespoon chopped red tomatoes.

Hints:
• Fresh grilled corn kernels, black beans and/or chopped fresh scallions would add flavor, color and texture to the dish.
• Use ground beef or chicken in place of the turkey.
• Canned tomatoes with chiles can be a fine substitute for the chopped tomatoes in this recipe.
