Pesto Turkey Panini

List of Ingredients
- 1 T mayonnaise
- 2 tsp prepared pesto
- 2 slices sourdough bread
- 1 T chopped, toasted pine nuts
- 1 slice provolone cheese
- 2 slices deli sliced oven roasted turkey breast
- 8 small spinach leaves
- non-stick cooking spray
Instructions
- Preheat covered countertop grill, if using.
- Stir together mayonnaise and pesto in small dish. Spread mayonnaise mixture on both slices of bread, mayonnaise side down.
- Sprinkle one side of bread with pine nuts. Top with cheese, turkey, spinach and remaining slice of bread.
- Spray outside of sandwich with cooking spray. Heat in countertop grill 3 1/2 minutes or until bread is golden and cheese has softened. OR, grill sandwich in preheated medium skillet over medium heat, turning over after first side has browned.
