Recipe Introduction
While kids may prefer ketchup, chipotle mayo is not to be missed. The pineapple relish is good enough to eat by the spoonful.
List of Ingredients
- 1/4 cup olive oil
- Juice of 1/2 lime
- Salt and pepper to taste
- 4 thick 5- to 7-ounce bun-size fresh filets of cod, halibut or mahi-mahi
- 4 potato hamburger buns
- Chipotle mayo (look in sauces)
- Pineapple relish (look in jam and jellies)
Instructions
- In a small bowl, whisk together the olive oil and lime juice and season with salt and pepper. Pour the marinade over the fish and allow it to marinate for 10 minutes.
- On a hot grill, grill the fish approximately 4 to 6 minutes per side until the flesh is opaque and flaky. (You can also cook the fish in a grill pan on the stove or saut� it in olive oil over medium-high heat, 3 minutes per side until just browned. Reduce heat to low, cover and cook for 3 minutes until opaque and flaky.) Toast the buns.
- Serve fish on toasted buns with chipotle mayonnaise and/or pineapple relish.
