Fresh Spaghetti Sauce

List of Ingredients
- 8 oz hot Italian turkey sausage links
- 8 medium tomatoes, peeled and cored
- 1 medium onion
- 1 to 2 tsps oregano
- salt and pepper, to taste
- 1 can (6 oz) tomato paste
- 1 clove garlic, mashed
- 1 lb ground beef
- 1/2 cup fine bread crumbs
- 1/2 lb mushrooms, sliced
Instructions
- Cut sausage links in 1" pieces; brown. Place tomatoes, onion, oregano and 1 tsp salt in food processor; run just long enough to chop onion. Place tomato mixture in a large saucepan; add tomato paste and garlic; bring to a boil and allow to simmer. Drain sausages; add.
- Meanwhile, combine beef, bread crumbs, salt and pepper. Form into balls and add to simmering sauce. Cover pan and continue cooking for about two hours over low heat. Fifteen minutes before sauce is finished, add mushrooms and remove garlic. Serve over pasta.
