Garlic Butter
List of Ingredients
- 1 garlic bulb
- 2 T olive oil
- 2 T fresh lemon juice
- 1 1/2 tsp grated lemon rind
- 1/2 tsp pepper
- 1 sprig fresh rosemary
- 1 sprig fresh thyme
- 1 cup butter, softened
Instructions
- Cut off pointed end of garlic, and place bulb on a piece of foil. Drizzle with oil and lemon juice; sprinkle with lemon rind and pepper. Top with rosemary and thyme sprigs, and fold foil to seal.
- Bake at 425 degrees for 30 minutes; cool. Squeeze pulp from garlic cloves; mash with a fork in a medium bowl. Stir in butter. Cover and chill 8 hours.
Final Comments
Yield: 1 cup.
Serve with potatoes, baguette slices, or fish.
TIP: Prepare Garlic Butter a day ahead.
