List of Ingredients
- 1/4 cup butter
- 1 cup prechopped onion
- 1/4 cup flour
- 5 cups vegetable broth
- 1 bag (5 oz) baby spinach (5 cups)
- 1 bag (8 oz) broccoli florets, finely chopped in the food processor
- 1/2 tsp salt
- 1/2 tsp ground black pepper
Instructions
- In a large saucepan, cook the butter and onion over medium heat for 3 minutes, or until softened. Add the flour. Stir to combine with the onion mixture.
- Add the broth. Cook, stirring constantly, for 3 minutes, or until simmering briskly.
- Add the spinach, broccoli, salt, and pepper. Stir. Cook for 8 minutes, or until the broccoli is crisp-cooked.
