Potato Leek Soup

List of Ingredients
- 3 T. butter
- 1 1/2 lbs. sliced leeks
- 1 1/2 lbs. peeled and diced potatoes
- 1 qt. chicken broth
- 1/2 c. cream
- freshly ground white pepper
- California Chives
Instructions
- Soften leeks and potatoes in butter in a large heavy pan over moderate heat for 10 minutes, stirring 3 times.
- Add broth. Cook until vegetables are tender.
- Purée. Return to pot and heat with cream. Season to taste. Serve topped with California Chives.
