Tortellini Soup

List of Ingredients
- 1 can (15.5 oz) chickpeas
- 1 T garlic-flavored olive oil, like Colavita
- 2 cans (14.5 oz each) chicken broth
- 1 pkg (13 oz) cheese tortellini
- 1 cup chopped arugula
- parmesan cheese, shredded
Instructions
- In saucepot over high heat, cook rinsed and drained chickpeas in hot olive oil for 1 minutes.
- Add chicken broth and bring mixture to a boil.
- Add tortellini to broth. Cook tortellini in soup according to package directions. Stir in arugula. Cook 1 minute. Serve with cheese on top of each individual serving.
