Broccoli Au Gratin

- 1 large head broccoli (about 1 1/2 lbs)
- 3/4 cup light sour cream
- 1/4 cup grated Parmesan cheese
- 3 T butter
- 1/2 cup bread crumbs
- 1/2 cup shredded swiss cheese
Instructions
- Trim broccoli; cut into 1" florets. Peel stalks; cut into 1" chunks.
- In a medium saucepan, bring 1" of water to a boil over high heat. Add broccoli stalks; cover and cook for 2 minutes. Add florets; cover and cook until crisp-tender, about 5 minutes. Drain; keep warm.
- In a large bowl, combine sour cream and Parmesan; mix well. In a small skillet, melt butter over medium heat. Add bread crumbs and stir until coated with butter and toasted.
- Preheat broiler. Toss the broccoli with sour cream mixture until coated. Turn into a shallow baking dish. Sprinkle with bread crumbs and Swiss cheese. Broil 5" from heat source until cheese melts.
