CHIVE AND BUTTERMILK MASHED POTATOES

- 1 lb. Yukon Gold potatoes, peeled, and, quartered
- 1/2 lb. unsalted butter
- 3/4 cup buttermilk
- 1 1/4 cup fresh chives, cleaned and chopped finely
Instructions
- Place potatoes in a large pot and fill with cold water. Bring to boil over high heat and cook until potatoes are very soft or for approximately 25 to 35 minutes. Drain potatoes in a colander and let sit for 5 minutes.
- Put the butter and buttermilk in a small sauté pan and melt over medium heat. Do not bring to a boil.
- Place potatoes, butter and buttermilk in a 5-quart mixing bowl. Add chives, and mix with a hand whisk or a potato masher for approximately 2 minutes.
- Then, blend on high speed for an additional 2 minutes. Remove from bowl and place into a serving bowl.
