    Carrots in Wine Sauce


    List of Ingredients


    • 1 1/2 lbs carrots, peeled and thinly sliced
    • 1/4 cup extra-virgin olive oil
    • 1 medium onion, thinly sliced
    • 2 T unbleached flour
    • 3/4 cup dry white wine
    • 1/4 cup water
    • 1 T minced fresh parsley


    Instructions


    1. Steam carrots 6 to 7 minutes in a vegetable steamer or cook, covered, in microwave with a little water until crisp-tender.
    2. In a large skillet, saute onion in olive oil over medium heat 5 minutes or until softened. Stir in flour and gradually add wine and water. When sauce is smooth, add carrots and parsley. Cover loosely and simmer for 15 minutes or until carrots are done.
