Crowder Peas

List of Ingredients
- 1 T extra-virgin olive oil
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 1 jalapeno pepper, seeded and chopped
- 2 cloves garlic, minced
- 2 lbs fresh or frozen crowder or black-eyed peas
- 1 smoked turkey thigh or leg
- 1 bay leaf
- 1 cup chicken broth
- 1 cup water
- salt and freshly ground pepper
Instructions
- Heat olive oil in a large saucepan over medium heat. Add onion, bell pepper, jalapeno and garlic and cook, stirring until soft.
- Add peas, turkey, bay leaf, broth and water, and bring to a boil. Partially cover and lower heat; simmer 1 hour, or until peas are tender.
- Remove turkey to a cutting board and discard bone. Dice meat and return to saucepan. Taste peas and season with salt and pepper to taste.
