Hearty Black-Eyed Peas

Recipe Introduction
In a pinch, canned black-eyed peas doctored with chopped country ham or smoked sausage make a respectable 10-minute substitute for the Southern classic.
List of Ingredients
- 1 (16 oz) pkg dried black-eyed peas
- 4 cups water
- 1 medium onion, chopped
- 3/4 tsp salt
- 1/2 tsp pepper
- 1 (1 lb) ham steak, cut into 1/2-inch cubes, or 1 ham hock
- 4 whole jalapeno peppers (optional)
Instructions
- Bring first 6 ingredients and, if desired, jalapeno peppers to a boil in a Dutch oven.
- Cover, reduce heat, and simmer 1 hour or until peas are tender.
