    Onion & Parmesan Tomatoes

    Recipe Introduction


    A great accompaniment to grilled steak or chicken.


    List of Ingredients


    • 3 large ripe tomatoes
    • 1 T olive oil
    • salt and freshly ground pepper, to taste
    • 1 onion, chopped
    • 1 clove garlic, minced
    • 1 T butter
    • 2 tsps fresh thyme leaves
    • 3 T freshly grated Parmesan cheese


    Instructions


    1. Preheat broiler.
    2. Cut tomatoes in half crosswise.
    3. Place in an 8 x 10-inch glass baking dish. Brush tops with olive oil and sprinkle with salt and pepper.
    4. Broil about 8" from heat for 3 to 4 minutes, until warmed through.
    5. Meanwhile, saute onion and garlic in butter until tender but not brown. Place on sixth of onion mixture on each tomato half, sprinkle with thyme leaves and top with Parmesan cheese.
    6. Return to broiler until cheese is melted and beginning to brown.
