    Pan Fried Greek Potatoes

    List of Ingredients


    • 4 slices bacon, chopped
    • 2 medium potatoes, thinly sliced
    • 1/4 cup sliced green onions
    • 1 pkg (4 oz) crumbled feta cheese with basil & tomato*


    Instructions


    1. Cook and stir bacon in large nonstick skillet on medium-high heat until bacon is crisp. Remove bacon with slotted spoon to paper towel.
    2. Add potatoes to bacon drippings in pan. Cook on medium-low heat 15 minutes or until tender, stirring occasionally. Add onions; cook and stir 2 minutes. Remove from heat.
    3. Stir in cheese. Serve immediately.


    Final Comments


    Makes: 4 servings

    *substitute feta cheese with peppercorn for basil & tomato

    **You can add olive oil with bacon drippings, greek seasonings, garlic, lemon juice...whatever you think will give it your own flavor.
