Pan Fried Greek Potatoes

- 4 slices bacon, chopped
- 2 medium potatoes, thinly sliced
- 1/4 cup sliced green onions
- 1 pkg (4 oz) crumbled feta cheese with basil & tomato*
Instructions
- Cook and stir bacon in large nonstick skillet on medium-high heat until bacon is crisp. Remove bacon with slotted spoon to paper towel.
- Add potatoes to bacon drippings in pan. Cook on medium-low heat 15 minutes or until tender, stirring occasionally. Add onions; cook and stir 2 minutes. Remove from heat.
- Stir in cheese. Serve immediately.

*substitute feta cheese with peppercorn for basil & tomato
**You can add olive oil with bacon drippings, greek seasonings, garlic, lemon juice...whatever you think will give it your own flavor.
