- 8 small red potatoes, scrubbed and quartered
- 8 cloves garlic, peeled
- 3 T. olive oil
- 1/2 t. freshly ground pepper
- 1/3 c. minced fresh rosemary
- 1/2 c. chopped green onions
Instructions
- Preheat oven to 400 degrees.
- Place potatoes and garlic in a single layer in a baking dish. Drizzle with olive oil and toss potatoes to coat evenly. Sprinkle with salt, pepper and rosemary and toss again.
- Roast for 30 minutes or until potatoes are crisp on the outside and tender inside. Sprinkle with green onions and serve.
