These crispy baby new potatoes are great with fish, meat or by themselves. They're a cross between a baked potato and a potato chip. What could be better?
List of Ingredients
- 1 1/2 lbs baby new potatoes, scrubbed and quartered
- 2 T olive oil
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 1/2 tsps chopped fresh Italian parsley
- 1 tsp chopped fresh rosemary
- 1 tsp chopped fresh oregano
- 1 tsp minced fresh chives
Instructions
- Preheat oven to 425 degrees.
- Place the new potatoes in a large bowl and drizzle them with the olive oil. Add the salt, pepper, and herbs and toss.
- Place the poatoes on a baking sheet, making sure that none of the potatoes are touching. (This helps them become crispy since the heat can only sear the exposed sides.)
- Roast the potatoes in the oven for 20 minutes. Turn the potatoes with a metal spatula, making sure that all sides are becoming crisp. Roast for another 20 minutes. The poatoes should be browned on all sides and a fork should easily pierce their flesh.
- Place the potatoes in a shallow bowl, and serve.
