Roasted Glazed Vegetables

List of Ingredients
- 1/4 cup butter, melted
- 1/4 cup firmly packed brown sugar
- 1/4 tsp ground nutmeg
- 1/2 tsp ground cinnamon
- 1/2 tsp pepper
- 4 medium parsnips, peeled and cut into 1" cubes
- 4 medium carrots, peeled and cut into 1" cubes
- 2 medium sweet potatoes, peeled and cut into 1" cubes
- 1/2 medium rutabaga, peeled and cut into 1" cubes
Instructions
- Preheat oven to 325 degrees; heat a roasting pan in it for 10 minutes.
- Stir butter, brown sugar, nutmeg, cinnamon and pepper in a large bowl; add vegetables, tossing to coat. Arrange vegetables in a single layer in roasting pan.
- Bake for 45 to 50 minutes or until tender.

*Juggle roasted dishes: don't worry about roasting more than one dish at a time - you can keep vegetables in the oven longer at a lower temperature.
*Vary the veggies: you can replace these ingredients with other root vegetables, such as beets or turnips.
