    Roasted Glazed Vegetables

    Enjoy the sweetness of these vegetables.


    List of Ingredients


    • 1/4 cup butter, melted
    • 1/4 cup firmly packed brown sugar
    • 1/4 tsp ground nutmeg
    • 1/2 tsp ground cinnamon
    • 1/2 tsp pepper
    • 4 medium parsnips, peeled and cut into 1" cubes
    • 4 medium carrots, peeled and cut into 1" cubes
    • 2 medium sweet potatoes, peeled and cut into 1" cubes
    • 1/2 medium rutabaga, peeled and cut into 1" cubes


    Instructions


    1. Preheat oven to 325 degrees; heat a roasting pan in it for 10 minutes.
    2. Stir butter, brown sugar, nutmeg, cinnamon and pepper in a large bowl; add vegetables, tossing to coat. Arrange vegetables in a single layer in roasting pan.
    3. Bake for 45 to 50 minutes or until tender.

    Serves 10

    *Juggle roasted dishes: don't worry about roasting more than one dish at a time - you can keep vegetables in the oven longer at a lower temperature.

    *Vary the veggies: you can replace these ingredients with other root vegetables, such as beets or turnips.
