Sautéed Red Potatoes

- 1 dozen small, unpeeled red potatoes (about 2 pounds)
- 1/4 cup nonfat Italian salad dressing
- 2 tablespoons herbes de Provence
- 1/8 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
Instructions
- In a large saucepan, combine potatoes and enough water to cover. Bring to a boil over high heat. Reduce heat to medium; cover and cook until fork-tender, about 20 minutes.
- Drain potatoes in a colander and let cool slightly. Cut potatoes in half.
- In a large skillet, heat salad dressing over medium heat. Add potatoes; toss well to coat with dressing. Sprinkle herbes de Provence, salt, and pepper over potatoes; toss to coat.
- Cook mixture, stirring frequently, until potatoes are golden and heated through, about 10 minutes. Transfer potatoes to a serving dish. Serve immediately.
