Shallot Topped Green Beans

- 1 lb green and/or yellow beans, trimmed
- 2 cloves garlic, peeled and chopped
- 2 shallots, peeled and quartered
- 1 lemon, zested and juiced
- 1 tsp herbes de Provence
Instructions
- In saucepot over high heat, bring 4 qts salted water to a boil. Add green and/or yellow beans and cook 4min. Drain.
- In large skillet coated with butter-flavored cooking spray over medium-high heat, cook chopped garlic and quartered shallots 2 min. Stir in beans, 2 T lemon juice, 1 tsp lemon zest and herbes de Provence.
- Cook 4 min., or until heated through. Season with salt and pepper to taste, if desired.
