Spinach Gratin

List of Ingredients
- 3 T butter
- 1 pkg (8 oz) sliced mushrooms
- 1/2 tsp minced garlic, jarred or fresh
- 4 bags (7 oz each) cleaned baby spinach
- 1/2 cup ricotta cheese
- 1 large or extra-large egg
- 6 T grated Parmesan cheese
- salt and pepper, to taste
- 2 T seasoned bread crumbs
Instructions
- Preheat the oven to 375 degrees.
- Melt the butter in a large deep skillet and saute the mushrooms until they lose their raw look. Add the garlic and toss to combine. Add the spinach and saute until dry.
- Combine the spinach mixture, ricotta, egg, and 1/4 cup of Parmesan, and season with salt and pepper. Mound the mixture in a 2-quart baking dish. Combine the remaining Parmesan cheese and bread crumbs, and sprinkle over the top. Bake for 35 to 45 minutes, until browned and bubbling.
