    List of Ingredients


    • 3 T butter
    • 1 pkg (8 oz) sliced mushrooms
    • 1/2 tsp minced garlic, jarred or fresh
    • 4 bags (7 oz each) cleaned baby spinach
    • 1/2 cup ricotta cheese
    • 1 large or extra-large egg
    • 6 T grated Parmesan cheese
    • salt and pepper, to taste
    • 2 T seasoned bread crumbs


    Instructions


    1. Preheat the oven to 375 degrees.
    2. Melt the butter in a large deep skillet and saute the mushrooms until they lose their raw look. Add the garlic and toss to combine. Add the spinach and saute until dry.
    3. Combine the spinach mixture, ricotta, egg, and 1/4 cup of Parmesan, and season with salt and pepper. Mound the mixture in a 2-quart baking dish. Combine the remaining Parmesan cheese and bread crumbs, and sprinkle over the top. Bake for 35 to 45 minutes, until browned and bubbling.
