Tomato Zucchini Bake

Recipe Introduction
Zucchini and tomatoes often ripen at the same time.
List of Ingredients
- 2 zucchini, about 1 1/2 inches in diameter
- 8 small plum tomatoes, about 1 1/2 inches in diameter
- 2 T olive oil
- 2 cloves garlic, minced
- 1 T finely chopped fresh oregano
- 1/2 cup freshly grated Parmesan cheese
Instructions
- Preheat oven to 425.
- Thinly slice zucchini into rounds. Core and slice tomatoes.
- Alternate slices of zucchini and tomato in a 9 to 10-inch shallow, round baking dish or individual oval baking dishes. Drizzle with olive oil and sprinkle garlic and oregano over top.
- Bake, uncovered, for 15 minutes. Zucchini should be barely tender. Sprinkle on Parmesan cheese and return to oven for 5 minutes, until just browned.
