    Recipe Introduction


    Zucchini and tomatoes often ripen at the same time.


    List of Ingredients


    • 2 zucchini, about 1 1/2 inches in diameter
    • 8 small plum tomatoes, about 1 1/2 inches in diameter
    • 2 T olive oil
    • 2 cloves garlic, minced
    • 1 T finely chopped fresh oregano
    • 1/2 cup freshly grated Parmesan cheese


    Instructions


    1. Preheat oven to 425.
    2. Thinly slice zucchini into rounds. Core and slice tomatoes.
    3. Alternate slices of zucchini and tomato in a 9 to 10-inch shallow, round baking dish or individual oval baking dishes. Drizzle with olive oil and sprinkle garlic and oregano over top.
    4. Bake, uncovered, for 15 minutes. Zucchini should be barely tender. Sprinkle on Parmesan cheese and return to oven for 5 minutes, until just browned.
