- 6 medium tomatoes
- 4 cups small broccoli florets (about 1 bunch)
- 4 cups small cauliflower florets (about 1 medium head)
- 2 cups (8-ounces) grated Muenster cheese
- 1 cup savory herb stuffing mix
- 3/4 cup chicken broth
- 1/2 cup sour cream
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
Instructions
- Preheat oven to 350°.
- Cut tomatoes in half crosswise. Scoop pulp from tomatoes, leaving shells intact. Place in a lightly greased 9-x-13-inch baking pan; set aside.
- In a large bowl, combine broccoli and remaining ingredients. Spoon mixture evenly into tomato shells.
- Bake for 35 to 45 minutes, or until vegetables are tender.
