    List of Ingredients


    • 4-6 small eggplants
    • 3 T olive oil
    • 6 cloves of garlic, thinly sliced
    • 1 cup fresh basil leaves
    • 2 cups spicy tomato sauce
    • 1 cup grated mozzarella
    • freshly ground black pepper
    • 1/4 cup grated Parmesan cheese


    Instructions


    1. Preheat broiler.
    2. Slice eggplant thinly. Place on a baking sheet and brush both sides lightly with oil. Broil until light brown, turning once, about 7 minutes per side.
    3. Preheat oven to 350 degrees. Coat a 9x13-inch pan with cooking spray.
    4. Alternate layers of eggplant, garlic, basil, several spoonfuls of tomato sauce, mozzarella, and pepper to taste. Repeat until all ingredients have been used. Top with the Parmesan cheese.
    5. Bake for about 30 minutes, until bubbly and lightly browned.
