Garlicky Collard Greens

This technique of blanching the collard greens in boiling water, then sauteing them takes away any bitterness.
List of Ingredients
- 1 lb chopped collard greens
- 2 T olive oil
- 4 cloves garlic, minced (about 4 tsp)
Instructions
- Bring large pot of water to a boil. Add collard greens,a nd simmer 5 minutes. Drain.
- Heat olive oil in same pot over medium heat. Add garlic, and saute 1 to 2 minutes, or until golden brown and fragrant. Add greens, and saute 5 minutes, or until tender. Season with salt and pepper, and serve warm.
