Tuscan Bread & Tomato Salad

- 5 cups cubed French bread
- 5 cups fresh tomato wedges
- 1/3 cup fresh basil, torn into pieces
- 2/3 cup chopped red onion
- 1/3 cup chopped green olives
- 1/3 cup shaved or coarsely grated parmesan cheese
- 1 to 2 cloves garlic, minced or pressed
- 3 T vinegar
- 1/4 cup extra-virgin olive oil
- cayenne or chili oil
- salt and pepper
Instructions
- Bake the bread at 400 degrees for 8 to 10 minutes until golden and firm, but not crunchy. Remove from oven.
- Combine tomatoes, basil, onion, olives, and parmesan in a serving bowl.
- Mix garlic, vinegar, oil, cayenne or chili oil (to taste), salt and pepper (to taste) in a separate cup.
- Toss bread cubes in with tomato mixture.
- Drizzle salad dressing over the mixture, stirring along the way.
- Toss until well blended.
- Let stand for 30 minutes so that the bread can absorb moisture from the tomatoes.
- Serve at room temperature.
