    Tuscan Bread & Tomato Salad

    List of Ingredients


    • 5 cups cubed French bread
    • 5 cups fresh tomato wedges
    • 1/3 cup fresh basil, torn into pieces
    • 2/3 cup chopped red onion
    • 1/3 cup chopped green olives
    • 1/3 cup shaved or coarsely grated parmesan cheese
    • 1 to 2 cloves garlic, minced or pressed
    • 3 T vinegar
    • 1/4 cup extra-virgin olive oil
    • cayenne or chili oil
    • salt and pepper


    Instructions


    1. Bake the bread at 400 degrees for 8 to 10 minutes until golden and firm, but not crunchy. Remove from oven.
    2. Combine tomatoes, basil, onion, olives, and parmesan in a serving bowl.
    3. Mix garlic, vinegar, oil, cayenne or chili oil (to taste), salt and pepper (to taste) in a separate cup.
    4. Toss bread cubes in with tomato mixture.
    5. Drizzle salad dressing over the mixture, stirring along the way.
    6. Toss until well blended.
    7. Let stand for 30 minutes so that the bread can absorb moisture from the tomatoes.
    8. Serve at room temperature.
