Deviled Wings with Blue-Cheese Sauce

- Sauce:
- 1 cup low-fat buttermilk
- 1 tsp ground cumin
- 1/2 tsp kosher salt
- 1/2 cup crumbled blue cheese
- Wings:
- 1 T crushed red pepper
- 2 T fresh lemon juice
- 1 T olive oil
- 2 tsp freshly ground black pepper
- 1 1/2 tsp kosher salt
- 1 tsp dried thyme
- 3 lbs (about 16) chicken drummettes or wings
- cooking spray
Instructions
- Stir together the buttermilk, cumin, kosher salt, and blue cheese, and refrigerate until ready to serve.
- To prepare wings, combine first 6 ingredients (through thyme) in a bowl. Rinse the chicken wings with water, and pat dry with paper towels. Add chicken to marinade, and toss well. Let stand at room temperature 20 minutes, or refrigerate several hours or overnight.
- Place the oven rack 6" to 8" below heat source, and preheat the broiler to high. Place the chicken drummettes on a jelly roll pan coated with cooking spray, spreading evenly. Broil about 8 to 10 minutes on each side, or until the chicken is thoroughly cooked through and very crispy. Serve hot with dipping sauce.
