List of Ingredients
24 large cherry tomatoes
1/4 tsp. salt plus more for seasoning
2 Tbsp. lemon juice
3 Tbsp. minced onion
2 Tbsp. finely chopped cilantro plus 24 whole cilantro leaves
2 Tbsp. mayonnaise
pinch of pepper
1/2 cup lump crabmeat
1/2 cup diced avocadoRecipe
Slice about 1/4" off top of each tomato.Using small end of melon baller,scoop out some of each tomato insides,leaving 1/4" of the wall intact.Lightly sprinkle insides with salt and lay cut side down on paper towels to drain for 30 minutes.In a medium bowl,mix lemon juice,onion,chopped cilantro,mayonnaise,1/4 tsp. salt and a pinch of pepper.Fold in crab and avocado,taste for seasoning.Fill each tomato with a spoonful of filling and top with a cilantro leaf.Transfer to a serving platter and chill,covered with plastic wrap till ready to serve.
Also I have been looking for a filling to put in my baked wontons and I think this would be wonderful, but I would like your opinion on the cilantro, or have you not tried this yet yourself.Since you don't like cilantro just sub some flat leaf parsley.It has some flavor unlike curly leaf parsley and I think it will work in both recipes
