List of Ingredients
Crust
1 2/3 cups finely crushed tortilla chips
1/4 cup melted butter
Filling
24 ounces softened cream cheese
4 eggs
1/2 cup mayonnaise
1.25 ounce package taco seasoning
2 tablespoons flour
1 1/2 cups cooked, finely chopped chicken
1 1/2 cups shredded Colby-Jack cheese
8 ounces sour cream
Toppings
sliced black olives
cooked corn kernels
chopped green onions
chopped tomato
salsa
Recipe
Heat oven to 325°F. Combine chips and butter and stir well. Press firmly onto bottom of 10 inch springform pan. Beat cream cheese till smooth. Add eggs, one at a time, beating well after each addition. Stir in mayonnaise, seasoning and flour. Stir in chicken and cheese. Pour into crust. Bake 55 minutes. Spread sour cream over top of cake and bake 10 minutes longer.
Cool to room temperature in pan on rack. Cover and chill 8 hours or overnight. Run knife around pansides to loosen cake. Remove sides. Arrange toppings on cake.
