Sausage and Egg Breakfast Casserole

List of Ingredients
1 pound ground pork sausage
1 tablespoon butter
1 bunch green onions, chopped
1/2 pound fresh mushrooms, sliced
12 eggs, beaten
1 (16 ounce) container cottage cheese
1 pound Monterey Jack cheese, shredded (I use part pepper jack cheese)
1 (4 ounce) can diced fire roasted green chiles
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/3 cup butter, melted
Recipe
Brown sausage in a large, deep skillet. Drain, and set aside. Melt butter in skillet, and cook and stir the green onions and mushrooms until tender.
Beat the eggs with a mixer and gradually add the flour, baking powder and salt. Stir in the melted butter.
In a large bowl, mix the egg mixture, cottage cheese, Monterey Jack cheese, and chiles. Stir in the sausage, green onions, and mushrooms.
Preheat oven to 350 degrees. Lightly grease a 9x13 inch baking dish.
Pour into the prepared baking dish.
Bake 40 to 50 minutes in the preheated oven, or until lightly brown. Let stand 10 minutes before serving.
I reserve a few tablespoons of cheese to sprinkle on top after it is baked.
I found this recipe when I was looking for a breakfast casserole that didn't have potatoes or bread in it to serve at a baby shower brunch. I like to put this casserole with a potato dish, a coffee cake or muffins and some fruit salad for a great brunch line-up.
