Posted by: IMWinkyPA******* I never liked steel-cut oats, but maybe with this mixture it would be good. Or, I think you could substitute regular oats. This is from the Oct. Better Homes & Gardens*********this ends up tasting like rice pudding. It is very creamy but the oats remain slightly chewy and I increased the second cooking time to 20 minutes. I used some leftover peach juice in place of the water and vanilla yogurt (soy) for the plain so I didn't use any honey at all and it was plenty sweet this way. I topped it with sliced banana and Brenda's microwave granola. It tastes like dessert not breakfast. I'm going to try cooking the oats longer the first time with a bit more water or cooking them in the crockpot and then stirring in the yogurt and fruit
List of Ingredients
1 1/2 c. water (leftover peach juice)
3/4 c. steel-cut oats
3/4 c. fat-free milk (soy)
1 6-oz. carton plain low-fat yogurt (vanilla soy)
3 T. honey, divided (2 T and 1 T) (omitted)
1/2 t. apple pie or pumpkin pie spice (1 tsp. apple)
1/8 t. salt
1/2 c. assorted dried fruit; such as cranberries, blueberries, snipped apples, apricots, or plums (prunes); and/or dried fruit bits
1/3 c. coarsely chopped almonds, toasted
sliced bananas (optional)
Recipe
1. In 2-qt. (1-qt) saucepan, combine water and oats. Bring to boiling; reduce heat. Simmer, uncovered, 8 min (oats will not be tender). Remove from heat; transfer to mixing bowl. Cool 5 min. Stir in milk, yogurt, 2 T. honey, apple pie spice, salt and dried fruits. Cover; chill 12 hrs. or up to 3 days.
2. To serve, heat oatmeal in saucepan over low heat 10 min. Stir in the remaining 1 T. honey. Divide among serving bowls. Top with almonds and sliced bananas. Makes 3 1/4 c. (5 , 1/3-cup servings)
