I fix MANY loaves every Christmas, and everyone LOVES it!
Not hard to fix, freezes well, wrapped in foil and very tasty-hope you like it!
List of Ingredients
In large bowl cream together
1 1/2 -cups brown sugar
1 1/2 - cups white sugar
1-cup vegetable oil
Beat in:
3 eggs
1-teaspoon vanilla
Add:
2 cups pumpkin (1 can)
Sift together:
1-teaspoon nutmeg
1-teaspoon cinnamon
1/2-teaspoon ground cloves
1/2-teaspoon salt
1/2-teaspoon baking powder
1-teaspoon baking soda
3 cups flour
Recipe
Add dry ingredients mix well, but don’t over mix and pour batter into 3 small (7 1/2” x 4”)
Loaf pans that have been sprayed with PAM.
Bake at 350 degrees for 50 minutes.
Cool 10 minutes in pans, then turn out to cool on rack.
During the holidays, when I make many loaves, I put all of the dry ingredients together in separate Baggies & store in the basement until ready to bake-3 at a time. Then I only have to get out all the dry ingredients ONCE, and measure them all. I also buy the canned pumpkin when it is on sale at Thanksgiving time
