    Recipe Introduction

Posted by: msrecipe*******It will definitely be on my baking list to make often and also it will be used for gift giving occasions since it makes 3 mini loaves.

    List of Ingredients

    3 cups all-purpose flour
    3/4 cup sugar
    1 Tablespoon baking powder
    3/4 teaspoon salt
    1/2 teaspoon baking soda
3/4 cup buttermilk or sour milk
    3/4 cup orange juice
1/4 cup (1/2 stick) butter, melted
    1 egg
    1 Tablespoon grated orange rind
1/2 teaspoon orange extract (I used 1/2 teaspoon orange oil)
1 cup semi-sweet “mini” chocolate chips

    Recipe

    Preheat oven to 350 degrees. Coat 3 small loaf pans (5 3/4” x 3” x 2 1/4”) with nonstick cooking spray.

Whisk together the flour, sugar, baking powder, salt and baking soda in a large bowl. Make a well in the center of the flour mixture. Whisk together the buttermilk (I used the sour milk), orange juice, melted butter, egg, orange rind and orange extract (I used orange oil) in a medium-size bowl until well blended. Add milk mixture to the well in the flour mixture all at once. Add 1 cup mini chocolate chips; stir together the flour mixture and the liquid just until the flour mixture is evenly moistened. Spoon the batter into the prepared pans, dividing evenly among the pans.

Bake loaves in the 350 degree oven for about 40-45 minutes or until a toothpick inserted in the centers of the loaves comes out clean. Let the loaves cool in the pans on a wire rack for 5 minutes. Turn the loaves out onto the wire rack and let them cool completely. After thoroughly cooled, sprinkle each loaf with powdered confectionery sugar.
