    Posted by: lucievpMA*********This recipe makes 2 loaves and freezes well. I also use it to make jumbo muffins. Adjust the cooking time to about 25 minutes

    List of Ingredients




    3 C flour
    1 1/2 tsp baking powder
    1 tsp baking soda
    1 tsp salt
    1 C creamy peanut butter
    1/2 C butter, sotened
    1/2 C sugar
    1/2 C packed brown sugar
    2 eggs
    1 1/2 C buttermilk or sour milk
    2 tsp vanilla
    1 C semi-sweet mini chips

    Preheat oven to 350°.

    Spray 2 8 1/2 x 4 1/2 in loaf pans with non stick spray.

    Combine flour, baking powder, baking soda and salt into a large bowl; set aside. Beat peanut butter, butter and sugars in another large bowl at medium speed until light and fluffy. Beat in eggs, 1 at a time, scraping down sides of bowl after each addition. Beat in buttermilk and vanilla. Gradually add flour mixture.

    Beat at low speed. Stir in mini chips; divide batter evenly between pans.

    Bake 45 minutes or until toothpick inserted in center comes out clean. Cool in pan on wire racks for 10 minutes. Remove from pan and cool completely on wire racks.
