List of Ingredients
2 cups unsifted all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 tsp. cinnamon
1/4 cup unsweetened cocoa
3 eggs
1 1/2 cups granulated sugar
1/2 cups salad oil
3/4 cup buttermilk
1/2 lb. raw zucchini, coarsely shredded
1 tsp. vanilla
1 cup coarsely chopped walnuts
1/2 cup raisins
Confectioner's sugar
Recipe
Generously grease and flour a 12-cup
Bundt* Pan. Preheat oven to 350º. Sift
flour wflh baking powder, soda, salt, cinnamon and cocoa; set aside. In large bowl with electric mixer, at high speed, beat eggs until very light and fluffy. Gradually beat
in sugar until very fluffy and light in color. Gradually beat in oil. With mixer at low speed, beat in flour mixture alternately with flour, buttermilk and flour in two additions. Drain zucchini well; fold in to flour mixture with vanilla, walnuts and raisins. Turn into prepared pan. Bake 55-60 minutes, or until cake tests done
