2 pkgs Duncan Hines Deluxe Devil's Food Cake Mix
6 large whole eggs
1 cup Cricco Oil OR Crisco Puritan Oil
2-2/3 cups water
2 cups light corn syrup
4 large egg whites
1/8 tsp salt
red food coloring
1/2 tsp peppermint extract
Recipe
Preheat oven to 350ºF. Grease & flour 2 - 13" X 9" X 2" baking pans.
In large mixer bowl, combine dry cake mix, whole eggs, oil & water. Mix, bake & cool cakes as directed on pkg. Freeze cooled cakes at least 2 hrs.
FROSTING:
Heat syrup to boiling.
In large mixer bowl at med speed, beat egg whites until frothy. Add salt; continue beating until soft peaks form. Turn mixer to high speed, gradually add hot corn syrup, beating until soft peaks form. Fold in food coloring to tint delicate pink. Fold in peppermint extract.
Draw heart on 3" square of cardboard; cut out. Set heart pattern on lower left corner of 1 cake. Cut around pattern through cake. Cut out 11 more hearts before removing cake pieces. Repeat with remaining cake.
Frost sides & tops of each cake heart. Insert pink birthday candle in center of each heart.
TIP: Before frosting cakes, brush off any loose crumbs, which will mix in with frosting. If necessary, apply a thin coating of frosting first to seal in any remaining crumbs
