    List of Ingredients




    3/4 cup butter or margarine -- softened
    1 1/2 cups sugar
    2 eggs
    1 1/2 teaspoons vanilla extract -- (or lemon extract)
    2 1/2 cups flour
    2 1/2 teaspoons baking powder
    1 teaspoon salt
    1 1/4 cups milk

    In mixer bowl, beat together butter and sugar 8 to 10 minutes or until fluffy. Scrape bowl and add eggs and vanilla at med. speed until fluffy (a few minutes).
    Sift together flour, baking powder and salt. Add to creamed mixture alternately with milk at low speed until well-blended. Line 18 cupcake tins with liners. Pour in batter and bake 350° 20-25 minutes. Remove from tins to rack to cool
