List of Ingredients
18 cupcakes (1-1/2 dozen)
1 (16 oz) pkg pound cake mix
2 large eggs
1 cup Libby's 100% pure Solid Pack Pumpkin (NOT pumpkin pie mix)
1/3 cup water
1 tsp baking soda
2 tsps pumpkin pie spice
Cream Cheese Frosting (recipe follows)
Recipe
Preheat oven to 325ºF. Paper line regular muffin cups.
In large mixer bowl, combine cake mix, eggs, pumpkin, water, baking soda & pumpkin pie spice. On med speed, beat 3 mins. Pour batter into prepared muffin cups.
Bake in preheated 325ºF oven 20-23 mins until golden brown. Cool 10 mins. Remove to wire racks to cool completely. Spread with Cream Cheese Frosting.
CREAM CHEESE FROSTING:
In small mixer bowl, beat 1-1/2 oz cream cheese, 3 tblsps butter & 1/2 tsp pure vanilla extract until fluffy. Gradually beat in 1-1/2 cups sifted powdered sugar & 2-3 tblsps milk OR cream until frosting is of spreading consistency
