List of Ingredients
18 cupcakes (1-1/2 dozen)
1 (16 oz) pkg pound cake mix
2 large eggs
1 cup Libby's 100% pure Solid Pack Pumpkin (NOT pumpkin pie mix)
1/3 cup water
1 tsp baking soda
2 tsps pumpkin pie spice
Cream Cheese Frosting (recipe follows)
Recipe
Preheat oven to 325�F. Paper line regular muffin cups.
In large mixer bowl, combine cake mix, eggs, pumpkin, water, baking soda & pumpkin pie spice. On med speed, beat 3 mins. Pour batter into prepared muffin cups.
Bake in preheated 325�F oven 20-23 mins until golden brown. Cool 10 mins. Remove to wire racks to cool completely. Spread with Cream Cheese Frosting.
CREAM CHEESE FROSTING:
In small mixer bowl, beat 1-1/2 oz cream cheese, 3 tblsps butter & 1/2 tsp pure vanilla extract until fluffy. Gradually beat in 1-1/2 cups sifted powdered sugar & 2-3 tblsps milk OR cream until frosting is of spreading consistency
